Chicken and Andouille Gumbo LA-SOUTHERN

Ingredients

  • 1 cup flour
  • 1 cup oil
  • 1 onion
  • 1 bell pepper
  • 3 celery stalks (trinity)
  • 4 cloves garlic
  • 450g (1 lb) andouille sliced
  • 900g (2 lb) chicken thighs
  • 6 cups chicken stock
  • 2 cups okra sliced
  • 1 tbsp filé powder
  • Creole seasoning
  • green onions
  • rice

Method

  1. Making — Make dark roux: cook flour and oil over medium heat, stirring constantly, 30–45 minutes until chocolate brown.
  2. Adding — Add trinity; cook 5 minutes. Add garlic.
  3. Adding — Add stock slowly; bring to boil.
  4. Adding — Add chicken and andouille; simmer 45 minutes.
  5. Removing — Remove chicken; shred. Return to pot with okra.
  6. Simmering — Simmer 20 minutes; stir in filé off heat. Season. Serve over rice.
