Ingredients

  • 1 cup cornmeal
  • ½ cup flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp cayenne
  • 1 egg
  • ¾ cup buttermilk
  • ¼ cup diced onion
  • oil for frying

Method

  1. Mixing — Mix dry ingredients; whisk in egg, buttermilk, onion.
  2. Heating — Heat oil to 190°C (375°F).
  3. Step 3 — Drop rounded tablespoons; fry 3–4 minutes until golden.
  4. Draining — Drain; serve hot.
