Gravy for Baked Fish

A fundamental gravy for baked fish used across many classic American recipes.

Ingredients

  • 1 tablespoon flour
  • 1 tablespoon butter
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon lemon juice

Method

  1. Melt — the butter in a saucepan.
  2. Add — the flour to the butter, and mix thoroughly.
  3. Strain — the liquid from the pan in which the fish was baked into a measuring-cup, and add enough hot water to fill the cup
  4. Add — this liquid to the butter-and-flour mixture, stirring constantly over the fire until it thickens and boils.
  5. Add — the Worcestershire sauce and lemon juice.
