Ingredients

• 1.4kg (3 lb) sweet potatoes
• ½ cup brown sugar
• ¼ cup butter
• ¼ cup milk
• 2 eggs
• 1 tsp vanilla. Topping: ½ cup chopped pecans
• ⅓ cup brown sugar
• 2 tbsp flour
• 2 tbsp melted butter

Method

1. Baking — Bake potatoes until soft; scoop and mash with sugar, butter, milk, eggs, vanilla.
2. Pouring — Pour into dish; mix topping ingredients; spread over.
3. Baking — Bake 175°C (350°F) 30 minutes.
