Texas Brisket TX-BBQ

Ingredients

  • 5.4kg (12 lb) whole packer brisket
  • ¼ cup kosher salt
  • ¼ cup black pepper
  • 2 tbsp garlic powder
  • oak wood chunks

Method

  1. Trimming — Trim fat cap to ¼ inch. Mix salt, pepper, garlic powder; coat brisket generously.
  2. Resting — Rest at room temperature 1 hour.
  3. Smoking — Smoke at 105°C (225°F) over oak, fat side up, 6–8 hours until bark forms and internal temp hits 75°C (165°F).
  4. Wrapping — Wrap in butcher paper; continue smoking to 95°C (203°F) internal (~4–6 more hours).
  5. Resting — Rest wrapped in cooler 2 hours. Slice against grain.
