Cantonese Roast Duck 广东烧鸭

Ingredients

  • 1 whole duck (2kg)
  • (Marinade) 2 tbsp hoisin
  • 2 tbsp soy sauce
  • 1 tbsp five-spice
  • 1 tbsp sugar
  • 4 cloves garlic
  • 2 star anise
  • (Glaze) 3 tbsp maltose + 2 tbsp Chinkiang vinegar + 2 tbsp water

Method

  1. Step 1 — Blanch duck with boiling water; dry thoroughly.
  2. Rubbing — Rub marinade inside cavity. Seal cavity with skewer.
  3. Brushing — Brush glaze all over; hang in cool place 4 hours or overnight (skin must dry).
  4. Roasting — Roast at 200°C (400°F) 30 min; brush glaze. Reduce to 180°C (350°F); roast 40 min more.
  5. Resting — Rest 10 min; chop. Serve with sauce made from reduced roasting juices.
