Chairman Mao's Red-Braised Pork 毛氏红烧肉

Ingredients

  • 1kg skin-on pork belly (4cm cubes)
  • 3 tbsp soy sauce
  • 2 tbsp dark soy sauce
  • 3 tbsp Shaoxing wine
  • 2 tbsp rock sugar
  • 3 dried red chilies
  • 3 slices ginger
  • 2 star anise
  • 1 cinnamon stick
  • 2 stalks green onion
  • 300ml water
  • (Note) Hunan version uses more chili than Shanghai version

Method

  1. Step 1 — Blanch pork in boiling water 5 min; drain and rinse.
  2. Browning — Brown pork in dry wok until fat renders, 5 min.
  3. Adding — Add rock sugar; caramelize. Add pork; coat.
  4. Adding — Add chilies, ginger, spices, green onion; fry 1 min.
  5. Adding — Add soy sauces, wine, water; bring to boil.
  6. Braising — Braise covered 1 hour. Uncover; reduce 30 min until thick.
