Claypot Rice 煲仔饭

Ingredients

  • 300g jasmine rice (washed)
  • 350ml water
  • (Toppings) 150g char siu (sliced)
  • 1 Chinese sausage (sliced)
  • 2 dried shiitake (soaked, sliced)
  • 1 bok choy
  • (Sauce) 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1 tbsp dark soy sauce (for color)

Method

  1. Placing — Place rice and water in claypot or heavy pot. Bring to boil uncovered.
  2. Oncing — Once water absorbed, reduce heat to lowest. Arrange toppings on rice.
  3. Covering — Cover; cook 12–15 min. Let sit 5 min.
  4. Drizzling — Drizzle sauce over. Mix at table. A crust at bottom is desirable.
