Green Curry (Gaeng Keow Wan)

Green curry is the most herbaceous of Thai curries — color comes from fresh green chilies, not blue-green additives.

Ingredients

  • (Green curry paste) 10 green chilies
  • 4 shallots
  • 4 garlic
  • 2 tbsp lemongrass
  • 1 tbsp galangal
  • 1 tsp kaffir lime zest
  • 1 tsp shrimp paste
  • 1 tsp white pepper
  • cilantro root. Curry: 400ml coconut milk
  • 300g chicken thigh
  • 2 Thai eggplants
  • 100g bamboo shoots
  • kaffir lime leaves
  • fish sauce
  • palm sugar
  • Thai basil

Method

  1. Pounding — Pound all paste ingredients in mortar or blend to smooth paste.
  2. Frying — Fry paste in thick coconut cream (from top of can) until fragrant and oil separates.
  3. Adding — Add chicken, remaining coconut milk, bamboo shoots, eggplant, lime leaves.
  4. Simmering — Simmer 15 min. Season with fish sauce and palm sugar.
  5. Step 5 — Finish with Thai basil.
