Green Curry (Gaeng Keow Wan)
Green curry is the most herbaceous of Thai curries — color comes from fresh green chilies, not blue-green additives.
Ingredients
- (Green curry paste) 10 green chilies
- 4 shallots
- 4 garlic
- 2 tbsp lemongrass
- 1 tbsp galangal
- 1 tsp kaffir lime zest
- 1 tsp shrimp paste
- 1 tsp white pepper
- cilantro root. Curry: 400ml coconut milk
- 300g chicken thigh
- 2 Thai eggplants
- 100g bamboo shoots
- kaffir lime leaves
- fish sauce
- palm sugar
- Thai basil
Method
- Pounding — Pound all paste ingredients in mortar or blend to smooth paste.
- Frying — Fry paste in thick coconut cream (from top of can) until fragrant and oil separates.
- Adding — Add chicken, remaining coconut milk, bamboo shoots, eggplant, lime leaves.
- Simmering — Simmer 15 min. Season with fish sauce and palm sugar.
- Step 5 — Finish with Thai basil.
