Larb Moo (Pork Larb)

Toasted rice powder (khao kua) is the signature Isaan thickener — adds nutty texture unique to this style of salad.

Ingredients

  • 400g ground pork
  • 3 tbsp toasted rice powder (raw rice dry-toasted then ground)
  • 2 tbsp fish sauce
  • 3 tbsp lime juice
  • 1 tbsp chili flakes
  • 4 shallots sliced
  • 4 scallions
  • fresh mint
  • cilantro
  • fresh Thai chilies

Method

  1. Cooking — Cook ground pork in dry pan until just done. Cool slightly.
  2. Tossing — Toss with fish sauce, lime, chili flakes, rice powder.
  3. Adding — Add shallots, scallions, herbs. Mix well.
  4. Tasting — Taste — should be aggressively tart, salty, spicy.
  5. Serving — Serve with sticky rice and raw vegetables.
