Nikujaga (Meat and Potato Stew)

Created by Admiral Tōgō in the Meiji era — inspired by the British navy's beef stew and adapted with dashi and soy.

Ingredients

  • 300g beef thinly sliced
  • 4 potatoes halved
  • 2 onions quartered
  • 2 carrots
  • 100g shirataki noodles
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sake
  • 1 tbsp sugar
  • 300ml dashi

Method

  1. Step 1 — Bring dashi, soy, mirin, sake, sugar to simmer.
  2. Adding — Add onions, carrots, potatoes. Cover, simmer 15 min.
  3. Separating — Separate beef slices, add to pot.
  4. Cooking — Cook until potato is tender and beef cooked through (5–8 min).
  5. Adding — Add shirataki. Serve in bowls.
