Okonomiyaki (Savory Pancake)

Okonomiyaki (literally "cook what you like") developed during WWII food rationing as a flexible, filling meal.

Ingredients

  • 200g all-purpose flour
  • 250ml dashi or water
  • 2 eggs
  • 300g shredded cabbage
  • 100g diced pork belly
  • 2 tbsp pickled ginger
  • tenkasu. Toppings: okonomiyaki sauce
  • kewpie mayo
  • katsuobushi
  • aonori

Method

  1. Mixing — Mix batter: flour, dashi, eggs. Rest 15 min.
  2. Stirring — Stir in cabbage, ginger, tenkasu.
  3. Step 3 — Pan-fry one large pancake on medium heat 5 min. Lay pork belly on top.
  4. Flipping — Flip carefully, press flat, cook 5 more min until cooked through.
  5. Topping — Top with sauce, mayo, bonito, aonori.
