Pad Thai

Pad Thai was promoted by Prime Minister Phibun as a nationalist dish in the 1940s to reduce rice consumption and promote noodles.

Ingredients

  • 200g flat rice noodles (soaked)
  • 200g shrimp or chicken
  • 3 eggs
  • 100g bean sprouts
  • 4 scallions
  • 50g firm tofu
  • 3 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tbsp oyster sauce
  • dried shrimp
  • peanuts crushed
  • lime

Method

  1. Soaking — Soak noodles in cold water 30 min.
  2. Step 2 — Stir-fry protein in hot wok with oil. Push to side, scramble eggs.
  3. Adding — Add noodles, toss on high heat. Add sauce (tamarind, fish sauce, sugar, oyster sauce).
  4. Adding — Add bean sprouts, dried shrimp, tofu, scallions. Toss 1 min.
  5. Serving — Serve with peanuts, lime, chili flakes, sugar on side.
