Shabu-Shabu

"Shabu-shabu" is onomatopoeia — the swishing sound of meat in hot broth.

Ingredients

  • 400g beef sirloin or ribeye sliced paper-thin
  • 1 block tofu
  • napa cabbage
  • shiitake mushrooms
  • enoki mushrooms
  • scallions
  • chrysanthemum greens. Broth: kombu dashi. Dipping sauces: ponzu (citrus-soy)
  • sesame sauce (goma dare)

Method

  1. Preparing — Prepare broth with kombu cold-steeped, then heated.
  2. Arranging — Arrange vegetables around pot at table.
  3. Step 3 — Each diner swishes their meat slice in the hot broth briefly (3–5 sec for thin-cut beef).
  4. Dipping — Dip in ponzu or sesame sauce.
  5. Cooking — Cook vegetables in broth as a side.
