Tom Kha Gai (Coconut Galangal Chicken Soup)

Tom kha gai uses galangal (kha), not ginger — a botanically distinct rhizome with a piney, medicinal aroma unique to Southeast Asian cuisine.

Ingredients

  • 400ml coconut milk
  • 400ml chicken stock
  • 400g chicken thigh sliced
  • 200g mushrooms
  • 3 stalks lemongrass
  • 8 slices galangal
  • 6 kaffir lime leaves
  • 5 Thai chilies
  • 3 tbsp fish sauce
  • 3 tbsp lime juice
  • 1 tsp palm sugar
  • cilantro

Method

  1. Step 1 — Bring coconut milk and stock to simmer with lemongrass, galangal, lime leaves.
  2. Adding — Add chicken, cook 5 min.
  3. Adding — Add mushrooms, simmer 3 min.
  4. Seasoning — Season with fish sauce, lime, palm sugar.
  5. Adding — Add chilies. Garnish with cilantro.
