Tom Yum Goong (Spicy Shrimp Soup)

Tom yum is one of 50 traditional Thai dishes the Thai government officially promotes as national cultural heritage.

Ingredients

  • 1L chicken stock
  • 400g large shrimp
  • 200g mushrooms
  • 3 stalks lemongrass pounded
  • 6 kaffir lime leaves torn
  • 5 slices galangal
  • 3 Thai chilies
  • 4 tbsp fish sauce
  • 3 tbsp lime juice
  • 1 tsp sugar
  • fresh cilantro
  • evaporated milk (optional for creamier version)

Method

  1. Step 1 — Bring stock to boil with lemongrass, lime leaves, galangal. Simmer 10 min.
  2. Adding — Add mushrooms, cook 3 min.
  3. Adding — Add shrimp, cook 2 min until pink.
  4. Seasoning — Season with fish sauce, lime, sugar.
  5. Adding — Add chilies. Garnish with cilantro.
