Kanelbullar (Swedish Cinnamon Buns)

Sweden celebrates Kanelbullens Dag (Cinnamon Bun Day) on October 4th each year, a tradition since 1999.

Ingredients

  • 500 g strong bread flour
  • 75 g superfine sugar
  • 7 g instant yeast
  • 1 tsp ground cardamom
  • 1 tsp salt
  • 250 ml warm whole milk
  • 100 g butter, softened
  • 1 egg
  • (Filling) 100 g butter, softened
  • 75 g superfine sugar
  • 2 tbsp ground cinnamon
  • (finishing) 1 egg, beaten
  • Pearl sugar (Swedish nib sugar)

Method

  1. Mixing — Mix flour, sugar, yeast, cardamom, and salt.
  2. Adding — Add warm milk and egg; mix into shaggy dough.
  3. Adding — Add butter bit by bit; knead 10 minutes until smooth and elastic.
  4. Proving — Prove in warm place until doubled, about 1 hour.
  5. Rolling — Roll dough into large rectangle (40×50 cm).
  6. Spreading — Spread filling butter over dough; sprinkle sugar and cinnamon.
  7. Rolling — Roll up tightly from long side; cut into 16–18 pieces.
  8. Arranging — Arrange on baking trays; prove 30 minutes until puffy.
  9. Brushing — Brush with egg; sprinkle with pearl sugar.
  10. Baking — Bake at 220°C (425°F) for 8–10 minutes until golden.
