Pickled Herring (Inlagd Sill)

Herring was the economic backbone of medieval Baltic trade, and pickling allowed the catch to be transported and stored for months.

Ingredients

  • 400 g salt herring fillets (or brined herring)
  • 200 ml white wine vinegar
  • 150 ml water
  • 100 g superfine sugar
  • 1 onion, thinly sliced
  • 1 carrot, thinly sliced
  • 1 tsp whole allspice
  • 1 tsp mustard seeds
  • 2 bay leaves
  • Fresh dill

Method

  1. Soaking — Soak salt herring in cold water overnight, changing water twice; drain.
  2. Step 2 — Bring vinegar, water, and sugar to boil, stirring until sugar dissolves. Cool.
  3. Layering — Layer herring, onion, carrot, and spices in a clean jar.
  4. Pouring — Pour cooled brine over to cover; add dill.
  5. Refrigerating — Refrigerate at least 24 hours before serving; best after 2–3 days.
  6. Serving — Serve on rye bread with sour cream, dill, and mustard.
