Spätzle

Documented in Swabia since the 18th century, spätzle are considered the quintessential Swabian comfort noodle, distinct from Italian pasta traditions.

Ingredients

  • 400 g all-purpose flour
  • 4 eggs
  • 150 ml whole milk
  • 1 tsp salt
  • Pinch of nutmeg
  • 2 tbsp butter for tossing
  • Salt for boiling water

Method

  1. Whisking — Whisk together flour, eggs, milk, salt, and nutmeg into a thick, sticky batter.
  2. Beating — Beat vigorously until batter forms bubbles and pulls from side of bowl.
  3. Step 3 — Bring large pot of salted water to a rolling boil.
  4. Pressing — Press batter through a spätzle maker or large-hole colander into boiling water, working in batches.
  5. Cooking — Cook until spätzle float to surface, about 2 minutes.
  6. Step 6 — Scoop out with slotted spoon; toss immediately in butter.
  7. Serving — Serve as a side dish, or pan-fry in butter until golden for Gebratene Spätzle.
