Gâteau Basque

Ingredients

  • 300g flour
  • 200g butter
  • 150g sugar
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 200g Basque cherry jam or pastry cream

Method

  1. Making — Make shortbread-style dough; chill 30 min.
  2. Pressing — Press half into pan; add jam or cream.
  3. Topping — Top with remaining dough; egg wash.
  4. Baking — Bake 180°C (350°F) 35 min.
