Gulab Jamun

Ingredients

  • 200g khoya (mawa)
  • 50g paneer
  • 3 tbsp maida
  • ¼ tsp baking soda
  • oil for frying. **Syrup:** 400g sugar
  • 500ml water
  • cardamom
  • rose water
  • saffron

Method

  1. Mixing — Mix khoya, paneer, maida, soda into smooth dough. Shape into smooth balls (small, no cracks).
  2. Frying — Fry in oil at 140–150°C (300°F) / 285–150°C (300°F) very slowly until deep brown, turning constantly (~8 min).
  3. Boiling — Boil syrup until sugar dissolves; add cardamom and saffron.
  4. Adding — Add hot gulab jamuns to warm syrup; soak 1 hour minimum.
