Pongal

Ingredients

  • 200g raw rice
  • 50g moong dal (yellow split)
  • 2 tbsp ghee
  • 1 tsp black pepper (coarsely cracked)
  • 1 tsp cumin
  • 8 cashews
  • 10 curry leaves
  • ¼ tsp asafoetida
  • salt
  • 4 cups water

Method

  1. Drying — Dry roast moong dal until fragrant and lightly colored.
  2. Cooking — Cook rice and dal together with 4 cups water and salt, pressure cook 3 whistles, or simmer 25 min until very mushy.
  3. Heating — Heat ghee in pan; fry cashews until golden. Add cumin, pepper, curry leaves, asafoetida; sizzle 30 sec.
  4. Pouring — Pour tadka over pongal; mix. Consistency should be soft and porridge-like.
