Arancini di Riso

Sicily's stuffed rice balls are shaped into spheres in Palermo and cones in Catania. The rice must be cooked with saffron and cooled completely before you attempt to mould it. Each ball should hold a pocket of ragĂš and a cube of cheese at its centre.

Ingredients

  • 400g arborio rice
  • 200g meat ragĂš
  • 100g mozzarella, diced
  • 100g peas, cooked
  • 3 eggs
  • Breadcrumbs, oil for frying
  • Pinch saffron

Method

  1. Cooking — Cook rice with saffron; mix with 1 egg and Parmesan. Cool.
  2. Shaping — Shape rice around ragù, peas, and mozzarella.
  3. Coating — Coat in egg and breadcrumbs; deep fry until golden.
