Arrabbiata

The heat in arrabbiata should be direct and honest, not buried under sweetness. Use dried red chilli flakes and let them bloom in the oil before the tomato goes in. The sauce cooks quickly — fifteen minutes at most. Prolonged simmering dulls the fire.

Ingredients

  • 400g penne
  • 400g canned tomatoes
  • 4 cloves garlic
  • 2–4 dried chillies, crumbled
  • 4 tbsp olive oil
  • Fresh parsley

Method

  1. Sautéing — Sauté garlic and chilli in oil until fragrant.
  2. Adding — Add tomatoes; simmer 15 min. Season.
  3. Cooking — Cook pasta; toss with sauce. Garnish with parsley.
