Burrida

A Sardinian preparation of catshark or dogfish in a walnut and vinegar sauce. The fish is boiled first, then sliced and layered with the pounded walnut sauce. It is served cold, after resting under the sauce for several hours.

Ingredients

  • 800g catshark (gattuccio) or dogfish, boiled and sliced
  • 2 garlic cloves
  • 3 tbsp vinegar
  • 2 tbsp toasted walnuts, ground
  • Parsley

Method

  1. Boiling — Boil fish; slice and lay in dish.
  2. Pounding — Pound garlic; mix with vinegar, walnuts, parsley.
  3. Pouring — Pour over fish; marinate overnight.
