Carciofi alla Romana

Roman artichokes braised stem-up in olive oil with garlic and mentuccia — wild mint. Trim the outer leaves ruthlessly; tenderness matters more than yield. The stems are edible when peeled to their pale core. Braise covered in a heavy pot until a knife slides through with no resistance.

Ingredients

  • 6 large artichokes
  • 4 garlic cloves
  • Fresh mint and parsley
  • Olive oil, white wine
  • Salt

Method

  1. Step 1 — Clean artichokes; stuff with garlic and herbs.
  2. Step 2 — Stand upright in pot; add oil and wine to cover halfway.
  3. Covering — Cover; braise on low heat 45 min.
