Carpaccio di Manzo

Giuseppe Cipriani invented this at Harry's Bar in Venice. The beef must be frozen briefly to slice paper-thin — a warm fillet tears rather than shaves. Dress it the moment it hits the plate, before the slices oxidize.

Ingredients

  • 300g beef fillet, frozen 1 hour
  • 60g Parmesan shavings
  • 60g arugula
  • 3 tbsp olive oil
  • 1 lemon, juiced
  • Salt, black pepper

Method

  1. Slicing — Slice frozen beef paper-thin.
  2. Arranging — Arrange on plate; drizzle with oil and lemon.
  3. Seasoning — Season; top with arugula and Parmesan shavings.
