Cotechino con Lenticchie

New Year's Eve in Emilia-Romagna: a fat pork sausage served on a bed of lentils that symbolize coins and prosperity. The cotechino must simmer gently for two hours — a hard boil splits the casing. The lentils are cooked separately and dressed simply with oil.

Ingredients

  • 1 cotechino sausage (pre-cooked)
  • 400g lentils (Castelluccio)
  • 1 onion, 1 carrot, 1 celery
  • Bay, sage
  • Olive oil, salt

Method

  1. Simmering — Simmer lentils with soffritto and herbs 30 min.
  2. Warming — Warm cotechino per packet instructions.
  3. Serving — Serve sliced over lentils. (Traditional New Year's dish)
