Fettuccine Alfredo

Alfredo di Lelio created this in Rome with nothing but butter, Parmesan, and the starch from fresh fettuccine. The sauce forms by tossing the hot pasta with cold butter and cheese until an emulsion appears. There is no cream in the original.

Ingredients

  • 400g fettuccine
  • 150g butter
  • 150g Parmesan, finely grated
  • Black pepper

Method

  1. Cooking — Cook pasta; reserve pasta water.
  2. Tossing — Toss hot pasta with butter in warm pan.
  3. Step 3 — Off heat, add Parmesan; toss adding pasta water until silky.
