Risotto al Nero di Seppia

A Venetian risotto stained ink-black by cuttlefish. The ink goes in with the wine, not at the end. Each grain of rice should be uniformly dark. Serve it with no garnish except a thread of olive oil — colour contrast distracts from the point.

Ingredients

  • 350g arborio rice
  • 400g cuttlefish, cleaned and sliced
  • 2 squid ink sachets
  • 1 onion, 2 garlic cloves
  • 150ml white wine
  • 1L fish stock
  • 4 tbsp olive oil

Method

  1. Sautéing — Sauté onion and garlic; add cuttlefish.
  2. Toasting — Toast rice; add wine.
  3. Step 3 — Build with fish stock; add ink during cooking.
  4. Step 4 — Finish without cheese (not traditional with fish).
