Salsa di Noci (Walnut Sauce)

A Ligurian sauce predating pesto, meant for pansoti or trofie. The walnuts must be blanched and peeled — the skins carry a bitterness that ruins the sauce. Soak the bread in milk until swollen, then pound everything to a thick cream.

Ingredients

  • 200g walnuts, shelled
  • 1 clove garlic
  • 50g ricotta
  • 4 tbsp olive oil
  • 50g Parmesan
  • Marjoram, pinch nutmeg

Method

  1. Soaking — Soak walnuts in hot water 5 min; peel.
  2. Blending — Blend walnuts, garlic, ricotta, Parmesan to paste.
  3. Step 3 — Thin with oil and pasta water to sauce consistency.
  4. Tossing — Toss with pansotti or pasta.
