Sardine in Saor

A Venetian agrodolce preparation of fried sardines layered with sweet-and-sour onions, pine nuts, and raisins. Fry the sardines crisp, then bury them under onions softened in vinegar. The dish must rest at least overnight — it is meant to be eaten cold the next day.

Ingredients

  • 600g fresh sardines, cleaned
  • 3 large onions, sliced
  • 150ml white wine vinegar
  • 50g pine nuts, 50g raisins
  • Olive oil, flour

Method

  1. Step 1 — Flour and fry sardines; drain.
  2. Sautéing — Sauté onions in oil until golden; add vinegar; reduce.
  3. Adding — Add pine nuts and raisins.
  4. Layering — Layer sardines and onion mixture; refrigerate 24 hours.
