Sugo al Pomodoro Semplice

The foundation of Italian cooking and the sauce against which all others are measured. San Marzano tomatoes, garlic, olive oil, basil — nothing more. The garlic comes out before it browns. Twenty minutes of simmering is sufficient; longer and the freshness is lost.

Ingredients

  • 800g canned San Marzano tomatoes
  • 4 cloves garlic
  • 6 tbsp olive oil
  • 10 fresh basil leaves
  • Salt

Method

  1. Heating — Heat oil; add garlic until fragrant (don't brown).
  2. Adding — Add tomatoes, crushing by hand. Season.
  3. Simmering — Simmer 20 min; add basil at end.
