Supplì al Telefono

🌍 Italian, Rome/Lazio Difficulty: ●●●○○

Rome's rice croquettes get their name from the telephone-wire strings the mozzarella pulls when you break one open. The risotto filling must be cold and firm before you shape it. Fry at a temperature that bronzes the crust before the centre overheats.

Ingredients

  • 300g risotto rice (cooked, cooled)
  • 100g mozzarella, cut in cubes
  • 2 eggs
  • Breadcrumbs
  • Oil for deep frying

Method

  1. Shaping — Shape cooled risotto around a cube of mozzarella into oval balls.
  2. Dipping — Dip in beaten egg; coat with breadcrumbs.
  3. Deep frying — Deep fry at 180°C (350°F) until golden. Serve hot so cheese stretches like a telephone wire.
