The Marche's answer to lasagne, richer and darker with chicken livers, giblets, and bĂ©chamel. The pasta sheets are thinner than Bolognese lasagne and the sauce has an offal depth that distinguishes it. Do not omit the giblets — they are the defining ingredient.
