Açorda à Alentejana

Ingredients

  • 6 eggs (poached)
  • 6 garlic cloves
  • 1 large bunch cilantro
  • 4 tbsp olive oil
  • 400g stale bread (torn)
  • 800ml hot water or stock
  • 2 tbsp white wine vinegar
  • salt

Method

  1. Pounding — Pound garlic with salt and coriander in mortar to paste.
  2. Heating — Heat oil in pan, add garlic-herb paste, cook 1 min.
  3. Adding — Add hot water/stock. Bring to simmer.
  4. Adding — Add torn bread, stir until absorbed. Texture should be porridge-like.
  5. Adding — Add vinegar. Make wells, poach eggs in bread mixture.
  6. Serving — Serve immediately with extra olive oil.
