Avgolemono Soup

Avgolemono derives from Sephardic Jewish agristada (egg-lemon sauce) and spread through Ottoman Greek communities.

Ingredients

  • 1.5L chicken broth
  • ½ cup orzo or rice
  • 3 eggs
  • juice of 2 lemons
  • salt
  • white pepper
  • fresh dill optional

Method

  1. Step 1 — Bring broth to simmer, add orzo, cook until tender (8–10 min).
  2. Whisking — Whisk eggs until frothy, whisk in lemon juice.
  3. Ladling — Ladle 1 cup hot broth slowly into egg mixture while whisking (tempering).
  4. Pouring — Pour tempered mixture back into pot. Do NOT boil. Stir until slightly thickened.
  5. Seasoning — Season and serve immediately with fresh dill.
