Baklava (Turkish Style)

Topkapi Palace records show baklava was distributed to Janissaries in a grand ceremony — 15th century origins in Ottoman royal kitchens.

Ingredients

  • 500g pistachios ground
  • 400g butter clarified
  • 500g thin phyllo. Syrup: 400g sugar
  • 300ml water
  • 1 tbsp lemon juice

Method

  1. Brushing — Brush deep rectangular pan with butter. Layer half phyllo sheets, buttering each.
  2. Spreading — Spread ground pistachios evenly.
  3. Continuing — Continue layering remaining phyllo, buttering each.
  4. Cutting — Cut into diamond shapes before baking.
  5. Baking — Bake 160°C (325°F)/160°C (320°F) 60 min until golden. Pour cooled simple syrup over hot baklava.
