Besara (Fava Bean Soup)

Besara is humble street food served especially in northern Moroccan cities like Chefchaouen, unchanged for centuries.

Ingredients

  • 500g dried split fava beans
  • 6 garlic cloves
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp turmeric
  • olive oil
  • lemon juice
  • salt
  • olive oil and cumin for drizzling

Method

  1. Simmering — Simmer fava beans and garlic in water until completely soft (45–60 min).
  2. Blending — Blend or pass through food mill until very smooth.
  3. Adding — Add spices, season with salt.
  4. Serving — Serve in bowls. Top with olive oil drizzle and generous cumin.
  5. Eatting — Eat with crusty bread for breakfast — this is a traditional Moroccan morning dish.
