Fasolada (White Bean Soup)

Fasolada is considered Greece's "national food" — a winter staple predating modern Greek statehood.

Ingredients

  • 400g dried cannellini beans (soaked overnight)
  • 2 carrots diced
  • 3 celery stalks diced
  • 1 onion diced
  • 400g crushed tomatoes
  • ½ cup olive oil
  • 2 tbsp tomato paste
  • salt
  • pepper
  • 1 bay leaf

Method

  1. Draining — Drain beans, cover with fresh water, boil 10 min, drain again.
  2. Step 2 — In large pot, sauté onion, carrot, celery in olive oil until soft.
  3. Adding — Add beans, tomatoes, paste, bay leaf, cover with water by 5cm.
  4. Simmering — Simmer 1.5–2 hours until beans are tender. Season generously.
