Greek Lemon Chicken (Kotopoulo Lemonato)

Lemon was introduced to Greece via Arab traders around 900 CE and quickly became central to Greek cuisine.

Ingredients

  • 1 whole chicken cut into pieces
  • 4 garlic cloves
  • juice of 3 lemons
  • ½ cup olive oil
  • 1 tsp dried oregano
  • 1 tsp thyme
  • salt & pepper
  • 500g baby potatoes halved

Method

  1. Marinating — Marinate chicken in lemon, olive oil, garlic, herbs, salt, pepper for 2+ hours.
  2. Placing — Place chicken and potatoes in roasting pan. Pour marinade over.
  3. Roasting — Roast at 200°C (400°F)/200°C (400°F) for 1 hour, basting every 20 minutes.
  4. Step 4 — Finish under broiler 5 min for crisp skin.
