Labneh (Strained Yogurt)

Labneh is one of the oldest processed dairy foods — nomadic tribes strained yogurt in goat-skin bags for centuries.

Ingredients

  • 1kg full-fat plain yogurt
  • 1 tsp salt
  • olive oil
  • za'atar
  • olives
  • cherry tomatoes to serve

Method

  1. Mixing — Mix yogurt with salt. Place in cheesecloth over a bowl.
  2. Refrigerating — Refrigerate and drain 24–48 hours.
  3. Step 3 — Result is thick, cream cheese-like labneh.
  4. Serving — Serve drizzled with olive oil and za'atar for breakfast dip, or roll into balls, coat in herbs/spices, store in olive oil.
