Loukoumades (Greek Honey Puffs)

Loukoumades (or loukoumádes) were awarded to Olympic Games winners in ancient times — an edible prize.

Ingredients

  • 300g all-purpose flour
  • 7g instant yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 300ml warm water
  • oil for deep frying. Topping: honey
  • cinnamon
  • crushed walnuts

Method

  1. Combining — Combine flour, yeast, sugar, salt. Gradually add warm water to form thick batter. Rest 1 hour.
  2. Heating — Heat oil to 175°C (350°F)/175°C (350°F).
  3. Step 3 — Drop spoonfuls of batter into hot oil. Fry 2–3 min turning until golden.
  4. Draining — Drain and immediately drizzle with honey, dust with cinnamon, add walnuts.
