Manakish (Lebanese Flatbread with Za'atar)

Manakish is traditionally a morning bread — women historically baked it in communal village ovens at dawn.

Ingredients

  • (Dough) 400g flour
  • 7g yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 230ml warm water
  • 2 tbsp olive oil. Topping: 3 tbsp za'atar blend (dried thyme, sumac, sesame seeds)
  • 3 tbsp olive oil mixed together

Method

  1. Making — Make dough, knead, rest 1 hour.
  2. Dividing — Divide into 6 portions, roll into thin rounds.
  3. Spreading — Spread za'atar-oil paste over each round.
  4. Baking — Bake at 230°C (450°F)/230°C (450°F) for 8–10 min until puffed and edges crisp.
  5. Folding — Fold in half to eat, optionally with labneh and tomatoes.
