Menemen (Turkish Scrambled Eggs with Peppers)

Ingredients

  • 4 eggs
  • 3 tomatoes chopped
  • 2 green peppers (or 1 bell + 1 chili)
  • 1 onion
  • 2 tbsp olive oil
  • ½ tsp paprika
  • salt
  • pepper
  • fresh parsley

Method

  1. Sautéing — Sauté onion in oil until soft. Add peppers, cook 5 min.
  2. Adding — Add tomatoes, season, cook until saucy (~10 min).
  3. Making — Make wells, crack eggs in. Scramble gently into mixture or keep yolks intact.
  4. Garnishing — Garnish with parsley. Eat with crusty bread directly from the pan.
