Mercimek Çorbası (Red Lentil Soup)

Mercimek çorbası has been eaten across Anatolia for at least 3,000 years — lentils were cultivated in Mesopotamia.

Ingredients

  • 300g red lentils
  • 1 onion
  • 2 carrots
  • 3 garlic cloves
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp turmeric
  • 1.5L vegetable stock
  • 3 tbsp olive oil
  • juice of 1 lemon
  • fresh mint and paprika butter for serving

Method

  1. Sautéing — Sauté onion and carrot in oil until soft. Add garlic and spices, cook 1 min.
  2. Adding — Add lentils and stock. Simmer 25 min until lentils dissolve.
  3. Blending — Blend until smooth. Add lemon juice.
  4. Making — Make mint-paprika butter: melt 2 tbsp butter, add dried mint and paprika.
  5. Ladling — Ladle soup, swirl butter on top.
