Moroccan Mint Tea (Atay)
Tea was introduced to Morocco by the British in the 18th century; Moroccans transformed it into the world's most elaborate tea ritual.
Ingredients
- 2 tsp Chinese gunpowder green tea
- 1 large bunch fresh spearmint
- 3–4 tbsp sugar (adjust to taste)
- 1L boiling water
Method
- Step 1 — Pre-warm teapot with boiling water, discard.
- Adding — Add gunpowder tea, add ½ cup boiling water, swirl and discard (washing the tea).
- Adding — Add fresh mint, sugar, fill with boiling water. Steep 3–5 min.
- Pouring — Pour and re-pour back into pot from height 3 times to mix.
- Serving — Serve in small glasses poured from height to create froth.
