Moroccan Mint Tea (Atay)

Tea was introduced to Morocco by the British in the 18th century; Moroccans transformed it into the world's most elaborate tea ritual.

Ingredients

  • 2 tsp Chinese gunpowder green tea
  • 1 large bunch fresh spearmint
  • 3–4 tbsp sugar (adjust to taste)
  • 1L boiling water

Method

  1. Step 1 — Pre-warm teapot with boiling water, discard.
  2. Adding — Add gunpowder tea, add ½ cup boiling water, swirl and discard (washing the tea).
  3. Adding — Add fresh mint, sugar, fill with boiling water. Steep 3–5 min.
  4. Pouring — Pour and re-pour back into pot from height 3 times to mix.
  5. Serving — Serve in small glasses poured from height to create froth.
