Mrouzia (Sweet Lamb with Honey and Almonds)

Mrouzia is traditionally prepared for Eid al-Adha — a preservation dish originally made to extend the sacrificial lamb.

Ingredients

  • 1kg lamb shoulder cut into pieces
  • 3 tbsp honey
  • 100g blanched almonds
  • 100g raisins
  • 1 tsp ras el hanout
  • 1 tsp cinnamon
  • ½ tsp ginger
  • ½ tsp saffron
  • 2 onions
  • 3 tbsp argan or olive oil
  • salt

Method

  1. Browning — Brown lamb in oil with onions. Add spices and salt.
  2. Covering — Cover with water, simmer 1 hour.
  3. Adding — Add honey, raisins, almonds. Simmer 30 more min until sauce is thick and glossy.
  4. Saucing — Sauce should reduce to a thick coating on the meat.
