Panzanella (Tuscan Bread Salad)

Originally made with raw onion and vinegar-soaked bread — tomatoes were added only after New World contact.

Ingredients

  • 400g stale ciabatta or sourdough torn
  • 4 large ripe tomatoes
  • 1 cucumber
  • ½ red onion
  • 20 basil leaves
  • 4 tbsp red wine vinegar
  • 6 tbsp olive oil
  • salt
  • pepper

Method

  1. Soaking — Soak bread in cold water 10 min. Squeeze out excess water.
  2. Combining — Combine bread with roughly cut tomatoes, cucumber, onion, basil.
  3. Dressing — Dress with vinegar and oil. Season well.
  4. Resting — Rest 30 min for flavors to meld before serving.
