Pide (Turkish Flatbread Pizza)

Pide predates Turkish Ottoman cuisine — flatbreads with toppings are ancient Anatolian staples.

Ingredients

  • (Dough) 500g bread flour
  • 7g yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 300ml warm water
  • 2 tbsp olive oil. Filling: 300g ground lamb/beef
  • 1 onion
  • 2 tomatoes
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 green pepper
  • salt. Optionally: eggs cracked on top

Method

  1. Making — Make dough, knead, rest 1 hour.
  2. Browning — Brown meat with onion and vegetables, season.
  3. Dividing — Divide dough into portions, stretch into oval boats.
  4. Placing — Place filling on each, fold edges up and pinch ends to seal boat shape.
  5. Baking — Bake 230°C (450°F)/230°C (450°F) for 12–15 min.
